Ingredients:

  • 2 cups coarsely chopped zucchini
  • 1 ½ cups coarsely chopped onions
  • 1 pound extra lean ground turkey breast or lean ground beef
  • ½ cup uncooked couscous (Lieber’s is gluten free, if desired)
  • 1 egg
  • 2 tbsp worcestershire sauce
  • 1 tbsp dijon mustard
  • ½ cup of bbq sauce (Less than 5 grams of sugar)

Directions:

  1. Preheat oven to 400 degrees  Spray 20 muffin cups with cooking spray.
  2. Place Zucchini & Onions in food processor until its finely chopped.
  3. Place the vegetables in the bowl and mix in the ground turkey, couscous, egg, worcestershire sauce, and dijon mustard until thoroughly combined.
  4. Fill muffin cups ¾ full   Top each cup with 1 tsp of bbq sauce
  5. Bake in the oven until juices run clear (about 25 mins)
  6. Let stand 5 mins before serving
